There are many systems used in food and fragrance production to form capsules, e.g. pectin, alginates, gelatine and gum Arabic. The chemistry of hydro-colloids is complex, but in many cases it is possible to generate drops, and particles, using Micropore membranes.
The image on the right shows gum Arabic gelled particles forming a shell around an oil phase. The median size is 200 microns and this is controllable by the use of shear at the membrane surface. We have considerable experience of many systems, please contact us if you would like further details.
